Simple Gluten and Dairy Free Chicken Salad
1 can of GF chicken, drained and rinsed
mayonnaise (make sure it has distilled vinegar only)
1 stick of celery, diced
1 medium apple, diced
hemp hearts (optional)
salt
pepper
Mix all ingredients together. Serve on safe bread, crackers, or even with tortilla chips.
Enjoy!

Hemp hearts....?
Hemp hearts are a really great nut substitute for us. . . they have a slightly nutty flavor. Plus, bonus: You can buy them at Costco, which makes them easy.
