Macaroons - Gluten, Dairy, Grain and Egg Free

While on this SCD/AIP diet I constantly crave cookies, treats, baked goods. I just love my goodies!

These macaroons are the perfect answer.  They are insanely yummy.  The texture is so good! Easy to make and safe for me too.  It's a SCD/AIP cookie dream come true!


Macaroons - Gluten, Dairy, Grain, and Egg Free 
1 1/2 cups unsweetened shredded coconut
1 Tbsp coconut flour
1/8 tsp salt
2 Tbsp coconut oil, melted
1/4 cup honey
1 Tbsp vanilla


In a food processor, mix everything until well combined. Scoop batter 1 level tablespoon at a time onto a parchment paper lined baking sheet. Bake at 350*F for 7-10 minutes, until slightly golden brown.  Cool for 1 hour.  Store in fridge.

Breakfast Cookies - Gluten and Dairy Free

Really the only kind of cold cereal we buy regularly is plain Cheerios and Corn or Rice Chex.  We get the sugary kinds of those for special occasions. 

So basically . . . making breakfast every day is essentially a full time job.  I'm constantly looking for variations, something to make it interesting or different.  

These breakfast cookies make almost everyone happy . . . everyone except my poor boy that's allergic to oats and peanuts.  On these days I have to make two breakfasts, so that he can have something else to eat.  But sometimes I have to hit the majority of people and do my best. 

So  . . . if you can have oats and some kind of nut butter . . . quick, whip these up! Give yourself a break from your normal cereal!   

 Breakfast Cookies - Gluten and Dairy Free 
2 cups of GF oats 
1/2 tsp. salt 
1 heaping tsp. cinnamon 
1 cup of peanut butter (or any nut or seed butter) 
1/4 c. honey 
1/3 c. unsweetened applesauce 
1 ripe banana, mashed 
1/2 c. raisins 

Add all ingredients to a bowl and mix with mixer.  Spoon out large balls on cookie sheet and flatten slightly. Bake at 325* for 16-18 mins.  

YUM!

Power Balls - Gluten, Dairy, Oat, and Nut Free

No time? Hungry for a simple, delicious snack? Yes, I've been there, done that. Alas, here you go. The delicious, no-hustle, scrumptious snack/dessert we've all been waiting for.   -AA


Power Balls - Gluten, Dairy, Oat, and Nut Free

1 cup buckwheat groats
1/2 cup SunButter (any nut butter will be good, if you tolerate it) 
1/3 cup honey
1/4 cup shredded unsweetened coconut
1/4 cup DF mini chocolate chips or raisins 
1 Tbsp chia seeds
1 tsp vanilla 
dash of salt

Mix all ingredients until well combined. Form into balls. Chill for 30 minutes. Enjoy!

Edible Chocolate Chip Cookie Dough - Gluten and Dairy Free

One fine summer day, after searching for gluten-free, dairy-free, everything-free desserts, I came across this delicious-looking cookie dough. I made it with a few alterations and everyone constantly raved and begged for more. I call that a success.  -AA


 Edible Chocolate Chip Cookie Dough - Gluten and Dairy Free

1/2 cup dates, pitted
1/4 cup DF butter, melted and cooled
6 tbsp rice milk, divided
1/2 tsp vanilla extract 
3/4 cup all-purpose GF flour
3/4 cup DF chocolate chips

Soak the dates in a cup of hot water for 5 minutes then put in a blender with 2 tbsp of the soaking water and blend until a thick paste forms (add more water if necessary). In a bowl, mix the melted DF butter, 1/4 - 1/2 cup of date paste (depending on the level of overall sweetness wanted for dough), 3 tbsp of rice milk, and the vanilla together. Add flour and stir until combined (if crumbly, add more milk). Fold in chocolate chips. 

Enjoy! 

*Store in the fridge, or in the freezer for longer periods.

Cinnamon Roll Chex Mix - Gluten and Dairy Free

Whenever LDS General Conference comes around, we like to join the rest of the LDS world and have cinnamon rolls. . . . alas, gluten-free-dairy-free-YEAST-free cinnamon rolls is not something I have attempted to conquer just yet. (But do plan to . . . some day.)  

But have no fear . . . this chex mix is the PERFECT substitute.  
My 9 year old son got tired of waiting for me to make it and made it himself which was super awesome!  (And also the reason it didn't get mixed quite as thoroughly as usual.)  
Cinnamon Roll Chex Mix - Gluten and Dairy Free 
16 cups of gluten free chex (we like corn and rice, or just corn)
1/2 c. of coconut oil 
3/4 c. sugar 
1 heaping Tbsp of cinnamon 

Pour chex into a large bowl.  Melt oil and stir into cereal, until it is evenly coated. Mix cinnamon and sugar in a small bowl then pour over cereal mixture. Gently stir with a spatula until even coated, then spread out to dry.  

So easy your kids can do it!

Sugar Cookies - Gluten and Dairy Free

 Whelp, about time for some cookies, wouldn't ya say? 
I accidentally added too much oil to these valentines cookies, but they still turned out pretty good! 
I've been meaning to post this recipe since clear back in October, see?

Alas, here we are. March.  But sugar cookies are good any time of year, right? So post them I shall. 

Sugar Cookies - Gluten and Dairy Free 
1 cup coconut oil 
1/2 c. light olive oil
2/3 c. sugar
2/3 c. powdered sugar
2 eggs 
1 tsp. vanilla 
4 cups of gluten free flour (I like Pamela's Bread Mix for this.)
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1 tsp. salt 

Cream coconut oil, olive oil, sugar, powdered sugar, eggs and vanilla together.  Add rest of ingredients and stir to combine.  Roll out between two pieces of parchment paper.  Cut into desired shapes.  Cook 8-10 mins at 350*.

Simple Microwave Popcorn - Gluten and Dairy Free

 A little picture tutorial today for the best microwave popcorn you'll ever have! 

None of that nasty stuff you can't even pronounce.  Just plain, simple, delicious popcorn.  

And so easy to make my 8 year old is going to demonstrate how to do it.  We make it a lot for after school snacks.  It's the best. 

Add 1/3 c. of popcorn seeds to a brown paper bag: 

Add a swirl or two of olive oil: 

Sprinkle some salt in: 

Fold your bag down twice and add a staple. It will be fine in the microwave. 
Shake bag to cover seeds in oil and salt. 

Lay flat and cook according to your microwave.  For us it is done perfectly at 1:30 mins. 

Add more salt if needed and enjoy! 

Yum yum!

Sesame Free Hummus

I feel like such a dummy.

Unless the recipes here are my own, I really try to give credit to the original recipe owner (unless the same recipe is found in many multiple places online).  I have lost my reference for this recipe though.  I didn't come up with this recipe on my own . . . and I have no idea who did. 

But whoever you are . . . thank you so much! 

This recipe is a huge crowd pleaser. Everyone who tries it loves it.  My kids adore it.  I have to make a double batch for after school snacks. 

And best of all? No sesame (tahini) which is a no-no in this family. 
Yay! 
 Sesame Free Humus
1 (15 - ounce) can garbanzo beans (chickpeas), rinsed and drained
1/4 c. water 
slight 1/4 tsp. garlic powder
1/4 tsp. cumin
1/2 tsp. salt
2 Tbsp. olive oil
1 Tbsp. lemon juice 

Combine all ingredients in food processor and process for a full 2 minutes, until creamy and smooth. 

Enjoy with chips or veggies. 

I served this hummus as part of a gorgeous spread made of ALL allergen free food for a party held in honor of my allergic boy.  All foods were safe for him - which NEVER happens at a party.  It was a wonderful day, and the hummus was a huge hit with everyone.

Pumpkin Cinnamon Apple Chips

 I have tried doubling this recipe and still . .  . the piggies children scarf them down in 5 seconds flat and argue about who ate the most. 

A good sign, I'm thinking. 
I will triple it the next time I make it. 
Pumpkin Cinnamon Apple Chips - Allergen Free
3 medium apples

Thinly slice the apples and sprinkle with the spice. Line a baking sheet with parchment paper and preheat oven to 200*. Bake the apples for 1 1/2 hours.  Flip the apples over and bake for another hour.  Check to see if they are done.  If you'd like them crunchier keep them in longer.  

**The key to this recipe is to start well in advance to when you'd like them to be done! No dilly-dallying with this one!

Snack Mix

This isn't so much of a recipe as it is an idea.

But when the kids all come storming in the door after school, and they are starving. to. death. I need ideas for snacks quick. 

This is an easy one to throw together and everyone is always happy, especially if I have it ready when they walk in the door! 
In a bowl mix together: 

GF Plain Cheerios
GF Chex (rice or corn) 
Raisins 
Dairy Free Chocolate Chips

Gluten Free Dairy Free Zucchini Cookies

Have I mentioned that cookies are my favorite ever?!

I love, love, love this recipe and so do all the kids.
 They are crispy on the edges and soft in the middle. Pretty much cookie perfection. 

Gluten Free Dairy Free Zucchini Cookies
3 c. of gluten free flour (I use Pamela's Bread Mix)
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1 3/4 c. sugar
2 heaping cups shredded, unpeeled zucchini
1/2 c. light (in flavor, not calories) olive oil
2 eggs

Combine everything in a bowl until well incorporated. It will seem very dry at first, but the zucchini will moisten it right up in a minute or two. 

Grease cookie sheets.  Bake at 350* for 20-25 mins, depending on how crunchy you want the edges.  We love them a little crunchy here!

Veggie Snack

 These crazy food allergies have turned me into a major planner, if nothing else.  Good, right? 

I have to plan every single meal or food that gets consumed, including after school snacks. It takes me hours each week to plan food.  

But if I don't plan something, everyone stares at me with wanting eyes that say, "What are we supposed to eat?" and mouths that say, "I'm staaaaarving!" Plus, you know my 3 boys? Hungry. All. The. Time. 

I present to you, one of our after school snacks.
