Do you need a little spanish rice to go with your fajitas?
Spanish Rice - Gluten and Dairy Free
1 c. rice
3 Tbsp. olive oil
2 c. chicken broth
1 small tomato, diced (half a can of stewed tomatoes works too, in a pinch)
1/4 of a small onion, diced
Brown rice in oil until golden brown. Add broth, tomatoes, and onion and bring to a boil. Reduce heat to low, cover, and cook for about 20 mins, until rice is done.
